CHARACTERISTICS:
Sparkling method: charmat medium, with very slow fermentation through inoculation of selected yeasts.Light sparkling straw yellow color. Very fine perlage with a delicate but persistent crown. Complex fine aromas initially floral with wildflower notes, followed by fruity notes of plum and white peach. Salty taste, revealing the same aromatic notes perceived on the nose. Good persistence in the finish.
Perfect sparkling for aperitifs, paired with cured meats like guanciale, creamy and delicate cheeses. Suitable for dishes such as fried zucchini flowers, shrimp fritters, lightly topped pizzas, ravioli with delicate fillings.
