CHARACTERISTICS:
APPARENCE: Straw colour with light green reflections, very delicate and persistent perlage.
NOSE: The bouquet opens with intense notes of orange blossom, mimosa and dried white flowers. Among the fruits, there are notes of peach, bergamot and orange jam, which then give way to notes of wild fennel and resin, as well as a delicate hint of ginger.
TASTE: The flavour, fresh and decidedly spicy, envelops the palate with distinct notes of citron pulp and Coscia pear, well balanced by a pleasant balsamic aftertaste and a long, lasting finish.
Perfect for raw fish-based aperitifs. For Asian dishes, sushi, sashimi and fish salads.
